In Gastronomy, location can determine the success or failure of a project. We evaluate potential locations based on factors such as daily footfall, the demographic makeup of the area, customer profile, accessibility and transport links, competition, visibility, seating capacity, outdoor terrace potential, rental cost, the technical condition of the property, the feasibility of installing ventilation and extraction systems, electrical capacity, kitchen facilities, hygiene requirements, and the likelihood of obtaining the necessary permits. Where needed, we can also support property review, initial negotiation, and economic evaluation before a lease or purchase is finalized.

Once the concept and design are finalized, the project moves into execution. Depending on the project, MMD Central can coordinate construction and fit-out through the Group’s own execution structure. This can include demolition, drywall construction, electrical work, plumbing, heating and ventilation, extraction systems, flooring, tiling, ceilings, lighting, painting, sanitary areas, counter and bar construction, kitchen installation, furniture, exterior signage, and final finishing. The goal is to hand over a project ready for operation — not simply a renovated space.

One of the most important parts of any Gastronomy project is the back-of-house. Equipment must be selected based on the menu, production capacity, guest volume, and workflow. This stage covers the planning of cooking equipment, refrigeration, freezers, preparation stations, bakery equipment, dishwashing, storage, coffee equipment, bar equipment, extraction systems, and POS and cash systems. The aim is to avoid unnecessary equipment purchases and to create a practical, economical kitchen workflow.

The menu must be appealing to guests while remaining economically controllable. Depending on the project, we can contribute to developing the food menu, breakfast offering, desserts, pâtisserie, bakery items, drinks, coffee, seasonal products, and signature items. For a venue to perform well beyond opening day, daily processes must be defined in advance. This can include opening and closing procedures, hygiene processes, HACCP structures, stock control, purchasing, goods receiving, production, waste control, cash procedures, customer service standards, complaint handling, cleaning plans, and staff responsibilities.

For a successful opening, marketing must begin well before the doors open. We can design a market entry strategy covering brand launch, social media, website, photography, content production, local marketing, influencer partnerships, opening campaign, Google presence, paid advertising, partnerships, and customer retention. Before the official opening, every part of the project must be tested in practice.
